5-string is quite common. I have seen 6-string, though the neck seems as wide as a sidewalk. Back in the 1960s Hagstrom made an 8-string bass, and I really wanted one. 8-string are still made. But an 8-string bass is really a 4-string with each string doubled an octave up. So analogous to a 12-string guitar.
7-strings guitar? There are a few ways to implement that. I have seen doubling just the G string, I have seen adding another string on the side.
Keith Richards - king of the rhythm guitar - usually removes a string, using just the top five. And also usually in an open tuning rather than conventional tuning.
You just can't...count... on strings anymore.
